So you’ve decided to put a spin on the ketogenic diet. (Good work). But unless you want to eat spinach salad every day, you’ll need some inspiration for lunch.
1. KETO MOZZARELLA AND TOMATO STEAK SALAD
2. CAULIFLOWER HASH WITH POBLANO PEPPERS AND EGGS
You may be thinking when should you prepare this meal? Breakfast, dinner, or maybe lunch? While that is a valid question, rest assured that this is a delicious dish at any meal, at any time of the day, as it is so versatile. The cauliflower and poblano pepper is more of a dinner dish, while the sunny eggs are definitely more of a breakfast dish.
3. KETO ASPARAGUS WALNUT SALAD
Most people enjoy cooked asparagus, but did you know that the longer you cook asparagus, the more nutrients it loses? That is why this recipe uses raw (raw) asparagus as the base of the salad. It’s a great alternative to lettuce, spinach, and spring mix salads, and it’s packed with so many more vitamins and minerals!
4. KETO AVOCADO AND SALMON SALAD
This salad is sure to leave you full until dinner time. The base of this salad is a delicious spring mix alongside smoked salmon, which is one of my favorite additions to any keto salad as it packs a lot of fat and good protein. Salmon is really the key to this recipe. It is then completed with slices of avocado and onion to give the salad a crunchy crunch.
5. PROSCIUTTO MANCHEGO GRILLED SALAD
Hot salads are always a great way to spice up regular salads. The lettuce in this recipe is grilled until it is perfectly charred. It is then cut into small pieces and topped with an Italian favorite, ham. Since these ingredients are different from your average salad, I knew a light dressing was needed to make sure this dish comes together wonderfully.
6. CREAMY KETO TACO SOUP
Keto Taco Soup may be the perfect soup recipe. It’s easy to make, extremely satisfying, and can be easily adapted to a Crock-Pot or Instant Pot. (Plus, you can make it freeze-safe for a super quick keto meal.) There’s a catch though: we’ll have to skip the beans, corn, and tortilla chips that often lurk in taco soup. With this keto taco soup recipe, they won’t be needed anyway.
7. KETO POKE BOWLS
In Hawaiian, pushing means “slicing”, which is the “hardest” part of making a delicious poke bowl. Everything about this keto-friendly poke recipe is easy: from the ingredients to preparation to cleaning. This makes it the perfect dish when you want something quick, delicious, healthy, and keto. Once you learn how to make it yourself, you no longer have to wonder how many carbohydrates and calories are hiding in your to-go bowl.
8. KETO CAULIFLOWER PIZZA CRUST
Although cauliflower is a low-carb vegetable, not all cauliflower crust pizzas are ketogenic. In fact, most store-bought products and restaurant-made cauliflower crusts have about the same amount of net carbs as traditional flour-based pizza. As with most of your favorite dishes, your best bet is to make your own, especially when you want pizza.
9. KETO HOAGIE LUNCH BOWL
This simple lunch bowl combines all your favorite flavors of a hoagie roll, but without the bread. We chop cold cuts like turkey, salami and ham and then mix them with lots of cheese, vegetables and sauce. You can chop the ingredients and mix the sauce beforehand for quick and easy lunches. Very little preparation is required and no cooking is required. I think that, like me, you will also decide not to miss the bread.
10. EASY CHICKEN AND FETA PLATE
If you need an easy lunch idea, look no further, because you have to try this chicken and feta dish. It’s a Mediterranean-style takeout meal that’s complete with a simple salad, feta cheese, olives, tomato, and chicken. Take home a rotisserie chicken to make an easy dinner, then save the leftovers for lunch. If you don’t have feta cheese, try substituting it in sliced mozzarella or halloumi.
